Mexican Street Corn Salad

I have a slight obsession with all things corn – it’s sweet, comforting, and I can call it healthy since it’s a vegetable right? Well let me just tell you, all my dreams came true with this mexican street corn salad. Sweet corn meets spicy jalapenos, meets salty cheese. All in one bite? Yes, this is good. It’s very good.

Seriously easy and seriously delicious, you’re going to want to add this salad to your summer BBQ menu rotation! It comes together in just a few minutes, and I love that it calls for ingredients I can easily store for when the craving strikes. (Which is often!)

How To Make Mexican Street Corn Salad:

  1. Heat the ghee in your pan, and add the garlic, cooking a few minutes until softened and fragrant. Add the corn, and cook until warm.
  2. Add corn to the remaining ingredients in a large bowl, and mix together.
  3. Serve!

Description

Slightly sweet, slightly salty and slightly spicy! This Mexican street corn salad is all flavor, and will quickly become a new family favorite.


Ingredients

Scale

2 Tbs ghee

2 garlic cloves, minced

4 cups frozen corn

¼ cup sliced scallion greens, diced

1 jalapeno pepper, seeded and chopped

¼ cup mayonnaise

1 ½ Tbs fresh lime juice

1 teaspoon chipotle chili powder

½ teaspoon salt

1 medium avocado, pitted and diced

¼ cup fresh cilantro, chopped

5 oz Cotija cheese, crumbled


Instructions

Melt the ghee in a large saucepan over medium heat. Add the garlic, and cook for 1-2 minutes or until softened and fragrant. Add the frozen corn to the pan, and cook until softened and heated through, stirring occasionally – about 15 minutes.

 

Remove the pan from the heat, and stir in the remaining ingredients. Serve warm!


Notes

I find Cotija cheese near the cream cheese in our local grocery store. If you can’t find it near you, whole fat feta cheese is probably the next closest thing!
