Fresh Pineapple Salsa

Homemade salsa is so incredibly easy to make, and soooo much better than anything you can buy at the store! This fresh pineapple salsa has become a favorite recipe of ours. It’s sweet and fruity from the pineapple, and spicy from the jalapenos, with plenty of extra flavor from the tomatoes, bell red pepper, cilantro and lime juice. Plus? It’s incredibly easy!

Just look at those colors, aren’t they gorgeous? I like to make my salsa on the chunky side, but you can chop your ingredients as big or small as you like. I love the big juicy bites of pineapple I get! Incredibly sweet and spicy, incredibly easy to make – what’s not to love??

You can serve this fresh pineapple salsa however you like – I love it with lime tortilla chips! It’s also amazing on basically any Mexican inspired dish; I served it with my Easy Beef Enchilada Casserole and holy guacamole! It was a match made in heaven!

How To Make Fresh Pineapple Salsa:

Chop your ingredients, and toss them together! That’s seriously it. It almost seems too easy, doesn’t it? The most time goes into chopping the pineapple. A little trick? I like to chop my pineapple earlier during the day, and then mince and assemble the remaining ingredients just before serving.

Description

Fresh, delicious, with a hint of spice (or more if you want!), this fresh pineapple salsa is so easy – you will never buy store-bought salsa again!


Ingredients

Scale

2 cups fresh pineapple, diced

1 red bell pepper, seeded and chopped

½ cup red onion, chopped

½ cup fresh cilantro, chopped

1 jalapeno, seeded and chopped

2 Tablespoons fresh lime juice

½ teaspoon salt

2 garlic cloves, finely minced

4 roma tomatoes, cored and diced


Instructions

Combine all the ingredients in a medium mixing bowl, and stir together gently.  Serve with your favorite tortilla chips!
