Christmas Cardamom Mimosas

I love many things about Christmas – the lights, the baked goods, the presents (duh!), but one of my very favorite things is my family’s traditional Christmas morning brunch! This year I’m serving up some Christmas mimosas to accompany our morning festivities!

These are very similar to a traditional mimosa, but have one extra ingredient. Cardamom bitters! Cardamom pairs so deliciously with orange, and is perfect with the sweetness from the champagne. I love that these are so easy too – no need to break out any fancy cocktail shaking equipment for this Christmas cocktail!

Ingredients:

1/3 cup chilled champagne
1/3 cup orange juice
2-3 shakes cardamom bitters

Directions: 

Combine all the ingredients in a champagne flute, stir gently and serve! Easy enough, right?

Warm & Creamy Pumpkin White Russians

We’re already a week into November (what!) and Thanksgiving is just two short weeks away! I’ve been working away at holiday recipes, and am so excited to share these pumpkin white russians with you today! They’re creamy, pumpkin spicy, with just a hint of coffee from the Kahlua! Basically a spiked pumpkin spice latte – I mean what can be wrong about that??

In our family we like to take our time on Thanksgiving, enjoying conversation and catching up with each other for a while before actually sitting down for dinner. When I started working on this holiday cocktail, I was imagining how delicious these would taste while we nibble on some appetizers like these mini savory apple pies that I shared last week!

Ingredients:

(Makes one drink)

2 oz Vodka
1 oz Kahlua or Baileys
1 oz heavy cream
1 1/2 tablespoons canned pumpkin puree
2 teaspoons pumpkin spice (with any leftovers you can make pumpkin spice latte cupcakes!)

Directions:

Add all ingredients to a cocktail shaker half full of ice, and shake well to combine. Serve over ice, and garnish with a little more pumpkin spice or cardamom if you’d like!

Spiked & Mulled Apple Cider

A few weekends ago we went apple picking, and I’ve been trying to think of apple recipe ideas because we can’t go through these fast enough! Jordan and I both love hot apple cider, so I thought why not make an adult version of the classic recipe! The alcohol in these is totally optional, so if you’re not drinking alcohol or want to serve this to kids, just omit it. Easy as pie! Oooh, apple pie!

This recipe makes about 16 servings, so reduce accordingly or store leftovers in the fridge for up to three days and reheat as you like. This cider makes the house smell like a delicious fall candle, and is perfect for drinking wrapped in a blanket with your favorite book.

Makes 16 (8 oz) drinks

Ingredients:

1 gallon fresh cider
1 orange
4 cinnamon sticks
1 tablespoon whole cloves
1 inch grated ginger
1 cup bourbon or brandy (optional)

Directions: 

Pour the juice into a large saucepan or dutch oven. Cut the orange into fourths, and add to the cider along with the cinnamon sticks, grated ginger and cloves.

Bring the liquid to a boil over medium heat, and then reduce to a simmer for 10 minutes.

Strain the liquid through a fine mesh sieve to remove cinnamon, ginger and cloves, and add bourbon or brandy as desired. Garnish with fresh apple slices and cinnamon if you’re feeling fancy, and serve!
