From Sea Air to Roses: St. Andrews, Scotland

After a day exploring Edinburgh, we headed off to the coast and seaside town St. Andrews. We had the most amazing weather – all the locals were telling us that it was the best weather they’ve seen in years! Score! (Or golf clap, since it is St. Andrews after all haha!)

I loved walking along the promenade, enjoying the ocean views, sea air and sun! I also had fun picking out my favorite townhouses and explaining to Jordan why we “need” a Scottish vacation home!

And of course, no trip to St. Andrews is complete without a stop at Jannettas Gelateria for gelato! Charlotte and I shared some delicious raspberry and rhubarb gelato, and she couldn’t get enough!

We finished the day by visiting Kellie Castle. You enter the gardens through a little hidden gate, and I swear I felt like I was in a scene from The Secret Garden! They have the most beautiful formal gardens. The roses were in full bloom, and the air was perfumed with their scent. Pure heaven.

After taking a stroll through the garden, we made our way over to the big grassy area they have in front of the castle. It was a perfect place to let Charlotte run around and get some energy out.

She was loving picking buttercups, finding feathers and showing us her treasures! I attempted to make her a little daisy chain crown, which turned out to be slightly more difficult than I imagined haha! Hence “attempted”.

It was such a nice way to end the day!

From St. Andrews we headed up to Inverness where we tempted fate with standing stones, cruised lochs, and may have even found a legendary monster.

Whisky and Castles: A Day in Edinburgh

Edinburgh is one of my all-time favorite cities. When I studied abroad in Scotland, I’d take the train to spend the day there at least a few times a month! I love how medieval it is, and how all the old buildings and walls inspire your imagination with all the things they must have seen.
One of my must-visit shops in Edinburgh is Jeffrey St.! We stopped in to do a Scotch tasting here, and Jordan and I both agree that it was one of our favorite memories! We sat down with our whisky tutor Hector and learned all about the history, politics and style of Scotch. It was so fascinating, and we both learned a ton! I was especially interested to learn about all of the different rules and regulations distilleries need to follow in order to produce an official (and legal) scotch.
Jeffrey St. is also a great spot to stop if you’re hoping to bring a bottle of Scotch home, since they have an incredible selection to choose from!  

After our whisky experience, we made our way up the Royal Mile to Edinburgh Castle. This is probably one of my favorite castles in Scotland. Again, because it’s so intact, and I can let my imagination run wild.

One of my favorite parts of the castle is the dungeon (since I’m an invited guest who can leave anytime!). You can actually still see graffiti on the walls from prisoners, mostly cursing various government officials, not surprisingly haha! I wish I could have taken pictures to show you, but turns out they don’t care too much for ambient light in prisons. Go figure! So you’ll just have to make a trip to see it!

We took our time on the way back down the Royal Mile, popping into various shops, stopping for a cider, and exploring little streets and wynds. There were kilted men playing bagpipes at various points along our walk, which was so fun and definitely “pinch me, we’re in Scotland” moments!

I was sorry we didn’t have time to see more of Edinburgh, but I know we’ll be back soon! Jordan and I are already planning our next trip to Scotland, to focus more specifically on Scotch! But this time we were headed off to the coast to breathe some sea air in the golf haven of St. Andrews.

Planes, Trains and…Tea! Out and About in York, England.

I can’t believe it was already a month ago that we started our vacation to the UK and France! We began our trip in York, England. I had never been before, and it was fun to explore a new part of Britain! 
Our first day there, we explored the city while overcoming jet lag. I’m pretty sure Charlotte slept most of our time there – during the day at least haha! 
One of my favorite memories in York was watching Charlotte chase the pigeons around York Minster. She was just so happy to stretch her legs! The pigeons probably don’t remember the experience as fondly, but it was fun for the rest of us!  
The next day we visited the National Railway Museum, which was really fascinating! They had trains from various different eras, and we were able to explore a steam engine control room which was really interesting. I would not have wanted that job, that’s for sure! Of course my favorite area was the royal coaches (big surprise!), and they had Queen Victoria’s railway coach on display (pictured below). 
After visiting the Railway Museum, we walked along the river to Betty’s Cafe Tea Rooms. One of my favorite things about Britain is their love of tea, and I was so excited to have a high tea experience with Jordan and Charlotte! 
Since Charlotte was having serious jet lag and wasn’t in the best of moods, we actually asked to be seated in the tea room foyer so we could be alone haha! The staff was super accommodating and understanding, and it ended up being perfect. Charlotte got to play since we had more space, and everyone got to enjoy their tea! 
I would definitely recommend Betty’s to anyone visiting York. The ambiance in the tea rooms is so happy and special – you can tell that most everyone is there celebrating something. We enjoyed all of the tea and food, but as you can see Charlotte was especially partial to the scones! 
York ended up being a perfect spot for us to get settled after our transatlantic trip, and acclimate to our new time zone. We felt so much more rested and ready for Scotland! But more on our trip North later 🙂 P.S. subscribe here so you don’t miss the next post!

My Favorite Things: Travel Edition

You’ve probably seen on Instagram or Facebook that we’ve been overseas in Britain and France for about two weeks now! We’ve been having such a fun time, just returning from a wine tour of the Bordeaux region, and moving into a few days in Paris to end our trip. Blog posts soon to come!

But for now, I’m so excited to share with you a few of my must-have items for travel. I’ve had the wonderful opportunity to travel a lot – both domestically and overseas. Every experience has taught me new tips and tricks for travel, including what to bring (and what to leave at home!). Check out my must-have items below!

Does anyone else get incredibly dehydrated while traveling? Especially on long international flights, I’m so guilty of forgetting to drink water. This trip we’ve been dealing with really high heats and limited air conditioning, which is not a great combo! I love to bring my S’well bottle with me, because it’s sturdy and doesn’t leak. There is seriously nothing worse than a leaky water bottle in your bag, so that’s a big deal to me! These keep your water cold for a long time too, and I love that.

I love the Jewelry Snug case for travel! It rolls up and doesn’t take a lot of space, but I feel confident that any jewelry I take along will be safe. The inner compartment is great for earrings, because it keeps each pair separate. My very favorite part is the plastic “sheets” for bracelets and necklaces. Each sheet has two plastic sides that stick to each other, so not only do your items stay safe – necklaces and bracelets don’t get tangled during transport. Ain’t nobody got time to sit there and untangle knotted necklaces. Pure genius! The basic jewelry snug comes with two sheets, which for me is plenty, but you can also buy extra sheets if need be. I will seriously not travel without this!

I’m very selective in my perfume, and I’m not about to leave my favorite scents at home while I travel. But I also don’t want to take a big bottle that will take up room and/or be above the TSA limit if I’m only taking a carry-on. That’s why I love that Jo Malone sells small 1 oz perfume bottles are perfect for travel. Jo Malone is my favorite perfume brand, and Red Roses is my absolute favorite scent (I wore it for my wedding!). It’s so happy and smells like a literal rose garden. I get so many compliments every time I wear it!

Rowenta Xcel Steam Travel DR7051 Hand-Held Garment Steamer Size, Dual-Voltage, Purple

It’s no secret that I love dresses, and that doesn’t change when I travel! But there is nothing worse than taking a wrinkled dress out of your suitcase. I recently discovered this travel steamer, and it works like a charm! On this trip I’ve used it on my dresses, but also on a lot of Charlotte’s clothes that got wrinkled. It’s so quick and easy to use which is a definite plus. It’s just big enough that it might be tricky if you’re only using a carry-on, but it’s been a life-saver on this trip!

Three Summer Salads

There’s just something so refreshing about salads in the summer! In the winter I’m more drawn to warm and comforting food, and then once spring rolls around all I want to eat is fresh fruits and salads! Maybe that has to do with it also being swimsuit season haha!

As we move into the warm weather season, I thought I’d share a few of my favorite salad recipes with you! These are all really easy to put together, and can be served as a main course or as a side. We sometimes make them all and have a summer salad medley for dinner!

 Kale Caesar Salad

This caesar dressing has been a family favorite for a long time. It’s very garlicly, so if you’re not a garlic fan I would reduce the amount down to 1 clove. I didn’t originally intend to use bacon in this, but we happened to have made it the other morning and I threw it in just for kicks. It actually turned out really great – I mean, when does bacon ever not work in a salad, anyway?

Ingredients: 

3/4 cups olive oil
1/2 cup grated parmesan
3 garlic cloves
1 egg
4 Tbs lemon juice
1/2 tsp Worcestershire
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground mustard
1 bunch kale
5-6 slices of cooked bacon, crumbled
1/2 cup shelled pistachios
1/2 cup shaved parmesan cheese

Directions:

Combine the first nine ingredients, olive oil through ground mustard in a food processor to make the caesar dressing. Blend until fully emulsified.

Remove the spine from the kale leaves, and tear leaves into bite size pieces. Pour the caesar dressing over the kale. Top with bacon, pistachios and parmesan cheese. Serve!

Apple Ginger Tuna Salad

 I love the crunch of the celery in this recipe, and the fresh pops of flavor from the ginger and apple. I prefer to mince the celery, apple and ginger really finely, because I don’t like to get huge chunks of it in my salad. You can use this to make tuna salad sandwiches, or just eat it plain!

Ingredients: 

Two cans tuna (6 oz each), drained
1/2 cup mayonnaise
1 celery stalk, finely minced
3/4 apple, cored, skinned and finely minced
2 inches fresh ginger root, skinned and finely minced
Salt and pepper to taste

Directions: 

Combine all of the ingredients in a bowl and serve. Now that’s my kind of recipe!

Greek Salad Skewers 

 These are one of my favorite things to eat during the summer, and they’re a great summer appetizer for barbecues. You can top these with your favorite Greek style dressing, or serve them plain! They’re honestly good either way. My preference lately is to thinly drizzle a little olive oil over them, along with a dusting of salt and pepper. These are perfect served on cocktail picks.

Ingredients: 

1 block of full fat feta, cut into 1/2 – 3/4 inch cubes
Grape tomatoes, halved 
Kalamata olives
Cucumber, sliced to size

Directions:

Assemble the skewers in any order you like. Be careful when adding the feta, as it has a tendency to crumble if handled too roughly. This is one reason to use full-fat feta, because along with tasting better it also holds up better. Top with your dressing of choice if you like, and serve!
